Instructions

  1. Prepare the sweet potatoes:
    Peel and cube the sweet potatoes, then place them in a large pot of water. Bring to a boil and cook for about 15-20 minutes, or until they are fork-tender.
  2. Mash the potatoes:
    Drain the cooked sweet potatoes and transfer them to a large bowl. Mash until smooth, then add the milk, melted butter, brown sugar, vanilla extract, cinnamon, nutmeg, salt, and egg. Mix well to combine.
  3. Assemble the casserole:
    Transfer the mashed sweet potatoes into a greased 9x13-inch baking dish. Smooth the top with a spatula.
  4. Add the topping:
    Evenly distribute the mini marshmallows over the top of the casserole. For added crunch, sprinkle the chopped pecans over the marshmallows.
  5. Bake:
    Preheat the oven to 350°F (175°C) and bake the casserole for about 25-30 minutes, or until the marshmallows are golden and the casserole is bubbly.
