  • 1 cup granulated sugar
  • ½ cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

For the Caramel Sauce:

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press this mixture into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then let cool.
  • Make the Filling: In a large bowl, beat together softened cream cheese and granulated sugar until smooth. Add sour cream, eggs, vanilla, cinnamon, nutmeg, and mashed sweet potatoes. Mix until well combined.
  • Bake the Cheesecake: Pour the filling over the cooled crust. Bake in the oven for about 60 minutes or until the edges are set and the center has a slight jiggle. Allow it to cool in the oven with the door ajar for about 1 hour, then refrigerate for at least 4 hours or overnight.
  • Prepare the Caramel Sauce: In a saucepan over medium heat, melt sugar until it turns a deep amber color. Remove from heat, stir in butter, then slowly whisk in heavy cream and vanilla until smooth. Let cool slightly.
