  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tsp baking powder
  • Pinch of salt
  • ¼ cup milk (dairy or non-dairy)
  • 1 tbsp melted butter (for brushing apples)
  • 1 tbsp sugar (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
  2. Prepare the apples: Peel, core, and slice apples into thin pieces. Toss in a little cinnamon and sugar, if desired.
  3. Make the batter: In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla. In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Stir until just combined.
  4. Assemble the cake: Pour the batter into the prepared pan, then arrange the sliced apples on top. Brush with melted butter and sprinkle with sugar if desired.
  5. Bake for 35-40 minutes or until the cake is golden and a toothpick inserted into the center comes out clean.
  6. Cool the cake in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
