  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups heavy cream (whipped to soft peaks)

For the Topping:

  • 2 cups fresh strawberries (sliced)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract (optional)

Instructions

  • Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs and sugar. Stir in the melted butter until the mixture is evenly coated and crumbs stick together when pressed.
    • Press the mixture into the bottom of a 9-inch pie dish, tart pan, or springform pan. Use the back of a spoon to compact the crust. Refrigerate for at least 15 minutes to set.
  • Make the Filling:
    • In a large bowl, beat the softened cream cheese until smooth and creamy, about 2 minutes.
    • Add powdered sugar and vanilla extract, then mix until fully combined.
    • In a separate bowl, whip the heavy cream until soft peaks form, about 3-4 minutes.
    • Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  • Assemble the Pie:
    • Pour the cream cheese filling into the chilled graham cracker crust. Smooth the top with a spatula.
    • Cover the pie with plastic wrap and freeze for at least 4 hours or until the filling is firm.
  • Prepare the Topping:
    • While the pie is freezing, slice the fresh strawberries and toss them with sugar. Let the strawberries macerate for about 30 minutes to release their juices.
    • Optionally, add vanilla extract for extra flavor.
  • Serve:
    • Once the pie is fully frozen, remove it from the freezer and let it sit for 5-10 minutes before slicing.
    • Top with the macerated strawberries and serve immediately.
