Ingredients
Scale
For the Crust:
- 1 ½ cups graham cracker crumbs (about 10 crackers)
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter (melted)
For the Filling:
- 8 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups heavy cream (whipped to soft peaks)
For the Topping:
- 2 cups fresh strawberries (sliced)
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract (optional)
Instructions
- Prepare the Crust:
- In a medium bowl, combine graham cracker crumbs and sugar. Stir in the melted butter until the mixture is evenly coated and crumbs stick together when pressed.
- Press the mixture into the bottom of a 9-inch pie dish, tart pan, or springform pan. Use the back of a spoon to compact the crust. Refrigerate for at least 15 minutes to set.
- Make the Filling:
- In a large bowl, beat the softened cream cheese until smooth and creamy, about 2 minutes.
- Add powdered sugar and vanilla extract, then mix until fully combined.
- In a separate bowl, whip the heavy cream until soft peaks form, about 3-4 minutes.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Assemble the Pie:
- Pour the cream cheese filling into the chilled graham cracker crust. Smooth the top with a spatula.
- Cover the pie with plastic wrap and freeze for at least 4 hours or until the filling is firm.
- Prepare the Topping:
- While the pie is freezing, slice the fresh strawberries and toss them with sugar. Let the strawberries macerate for about 30 minutes to release their juices.
- Optionally, add vanilla extract for extra flavor.
- Serve:
- Once the pie is fully frozen, remove it from the freezer and let it sit for 5-10 minutes before slicing.
- Top with the macerated strawberries and serve immediately.
Notes
- Storage: Store any leftover pie in the freezer. Wrap it tightly with plastic wrap or foil to prevent freezer burn. It will stay fresh for up to 2-3 weeks.
- Variations: You can use other berries like raspberries or blueberries in place of strawberries, or mix a combination of berries for a colorful twist.
- Whipped Cream Tip: If you prefer a sweeter topping, consider lightly sweetening the whipped cream with a little powdered sugar.
