Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. Make the Cake:
    In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter, milk, eggs, and vanilla. Beat with an electric mixer on medium speed for 2 minutes until smooth.
  3. Bake the Cake:
    Pour the batter into the prepared baking pan, smoothing the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  4. Prepare the Strawberries:
    In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to coat and let sit for about 15-30 minutes until the strawberries release their juices.
  5. Make the Whipped Cream:
    In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  6. Assemble the Shortcake:
    Once the cake is completely cool, cut it into squares. To serve, place a piece of cake on a plate, top with a generous scoop of strawberries, and a dollop of whipped cream. Repeat for additional servings.
