For the crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the cheesecake layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream

For the strawberry topping:

  • 2 cups fresh strawberries, diced
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  • Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a 9x13-inch baking pan. Bake for 8-10 minutes. Let it cool.
  • Make the cheesecake filling: Beat softened cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix until fully combined. Pour over the cooled crust.
  • Bake the cheesecake layer: Bake for 25-30 minutes until the edges are set, and the center has a slight jiggle. Let cool to room temperature, then refrigerate for at least 2 hours.
  • Prepare the strawberry topping: In a saucepan, combine diced strawberries, sugar, cornstarch, and water. Simmer until thickened. Cool completely before spreading over the cheesecake layer.
  • Assemble: Once the cheesecake and topping are cool, spread the strawberry topping over the cheesecake. Refrigerate for another hour, then slice and serve.

Notes

  • You can use other fruits, like blueberries or raspberries, for a different topping.
  • If you want a firmer crust, you can press it into the pan more firmly before baking.
