For the Lasagna:
- Ricotta Mixture:
- 2 cups ricotta cheese
- 1 cup shredded mozzarella (plus extra for topping)
- 1 cup grated Parmesan
- 1 large egg
- 2 cups fresh spinach, chopped
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Assembly:
- 3 cups marinara sauce
- 9 no-boil lasagna noodles
- 1 cup shredded mozzarella for layering
Instructions
- Prepare Ricotta Mixture:
In a large bowl, combine ricotta, mozzarella, Parmesan, egg, spinach, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined. - Assemble in Slow Cooker:
- Spread ½ cup of marinara sauce on the bottom of the slow cooker.
- Add a single layer of lasagna noodles, breaking them to fit as needed.
- Spread a layer of the ricotta mixture over the noodles.
- Top with marinara and a sprinkle of mozzarella.
- Repeat layers until ingredients are used, ending with marinara and mozzarella on top.

Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours, until the noodles are tender and cheese is melted. - Serve:
Let the lasagna rest for 10 minutes before slicing. Garnish with fresh basil or parsley if desired.
