Description

  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar, mozzarella, or feta)
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
  2. Mix the Ingredients:
    In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  3. Add the Fillings:
    Fold in the chopped spinach, cheese, and any optional ingredients like bell peppers and onions until evenly distributed.
  4. Fill the Muffin Tin:
    Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake:
    Bake for 18-20 minutes or until the muffins are set and lightly golden on top. A toothpick inserted in the center should come out clean.
  6. Cool and Serve:
    Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm or at room temperature.

Notes
