  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 cup feta cheese, crumbled
  • 1/2 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs (like dill or parsley)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 4-5 minutes). Stir in minced garlic and cook for another minute. Remove from heat.
  • Prepare Spinach: If using fresh spinach, chop it roughly. If using frozen, ensure it is completely thawed and drained. Combine the spinach with the sautéed onion and garlic.
  • Mix Ingredients: In a large bowl, whisk together eggs, milk, feta cheese, salt, and pepper. Fold in the spinach mixture until well combined.
  • Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish and spread evenly. Sprinkle bread crumbs on top.
  • Bake: Bake in the preheated oven for 30-35 minutes, or until set and golden on top.
