Ingredients
Scale
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 4 tablespoons unsalted butter (melted)
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
Topping:
- 1 cup boiling water
- 1/2 cup sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- Prepare Batter:
- In a medium bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the milk, vanilla extract, and melted butter until just combined. Spread the batter evenly into the prepared dish.
- Make the Cinnamon-Sugar Mix:
- In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture over the batter in the baking dish.
- Prepare the Topping:
- In a separate bowl, stir together the sugar and cinnamon for the topping. Sprinkle evenly over the cobbler batter.
- Add Boiling Water:
- Pour 1 cup of boiling water over the entire cobbler mixture (do not stir). The water will create a delicious caramel-like sauce as the cobbler bakes.
- Bake:
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and bubbly.
- Serve:
- Let cool slightly before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
- For a more indulgent twist, you can add sliced apples or pears to the bottom of the cobbler before adding the batter.
- This dessert is perfect for making ahead. You can reheat it in the oven before serving.
