  • 2 medium zucchinis (about 400g), grated
  • 1 cup all-purpose flour (120g)
  • 2 large eggs
  • ½ cup grated Parmesan cheese (50g)
  • ¼ cup fresh dill or parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup olive oil or vegetable oil (120ml) for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix the grated zucchini, flour, eggs, Parmesan cheese, chopped herbs, salt, and pepper until combined.
  3. Heat oil in a skillet over medium heat until hot.
  4. Drop tablespoons of the batter into the hot oil, spacing them apart. Fry for about 3 minutes per side until golden brown.
  5. Drain on paper towels to remove excess oil before serving.
