  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon sugar (optional)
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
  • Salt and pepper, to taste
  • Red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  • Prepare the chicken: Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  • Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Transfer chicken to a plate and cover loosely with foil to keep warm.
  • Make the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the crushed tomatoes and stir to combine. Bring to a simmer and cook for 5-7 minutes. Add balsamic vinegar, sugar, basil, and red pepper flakes (if using). Stir and season with salt and pepper to taste.
  • Combine chicken and sauce: Return the chicken to the skillet, spoon some sauce over the chicken, and let it simmer for another 2-3 minutes to heat through.
  • Serve: If desired, sprinkle with Parmesan cheese before serving.

Notes

  • You can use chicken thighs instead of breasts for a richer flavor and juicier texture. Adjust the cooking time accordingly, as thighs may take a little longer to cook through.
  • For a creamy twist, add a splash of heavy cream to the sauce toward the end of cooking.
  • Serve the chicken with pasta, rice, or roasted vegetables to make a complete meal.
