    • ½ lb ground veal
    • 1 cup breadcrumbs

    • 1 bell pepper, finely chopped
    • 2 celery stalks, finely chopped
    • 3 cloves garlic, minced
    • 2 eggs
    • 2 tablespoons fresh parsley, chopped
    • 1 tablespoon fresh basil, chopped
    • Salt and pepper, to taste
  • For the Sauce:
    • 1 cup tomato sauce
    • 1 tablespoon olive oil
    • Salt and pepper, to taste

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Sauté the onion, bell pepper, and celery until soft, about 5-7 minutes. Add garlic and cook for an additional minute.
  • Mix the Meatloaf: In a large bowl, combine the ground beef, pork, and veal. Add the sautéed vegetables, breadcrumbs, Parmesan cheese, eggs, herbs, salt, and pepper. Mix gently until just combined.
  • Shape and Bake: Transfer the mixture to a baking sheet lined with parchment paper or a greased loaf pan. Shape it into a loaf. Spread half of the tomato sauce over the top and bake for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • Rest and Serve: Let the meatloaf rest for 10-15 minutes before slicing. Serve warm with the remaining tomato sauce.
