Sheet Pan Eggs are a convenient and delicious breakfast option, perfect for meal prep or feeding a crowd. Fluffy, flavorful, and fully customizable, these baked eggs can be loaded with your favorite veggies, cheeses, and meats.


Ingredients

  • 12 large eggs
  • 1 cup milk
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper, to taste
  • Optional: cooked sausage or bacon, diced

Instructions

  • Preheat your oven to 350°F (175°C) and grease a large baking sheet.
  • In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  • Stir in the diced bell peppers, spinach, and cheese (and meats, if using).
  • Pour the egg mixture onto the prepared baking sheet, spreading it evenly.
  • Bake for 20-25 minutes, or until the eggs are set and lightly golden.
  • Let cool for a few minutes, then slice into squares and serve.
