- 300g (10 oz) pasta (spaghetti, linguine, or fettuccine)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 200g (7 oz) mixed seafood (shrimp, scallops, mussels)
- 1 cup heavy cream
- 1 cup seafood or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1 tsp dried basil or parsley
- Salt and pepper, to taste
- Juice of 1/2 lemon
Instructions
- Cook the Pasta: Boil the pasta in salted water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- Sauté the Garlic: Heat olive oil in a large pan. Add garlic and sauté until fragrant.
- Cook the Seafood: Add the seafood to the pan and cook until just opaque, about 3-5 minutes. Remove and set aside.
- Prepare the Sauce: Add cream and broth to the same pan, stirring well. Simmer for 5 minutes until slightly thickened.
- Combine Ingredients: Stir in Parmesan, herbs, and lemon juice. Adjust seasoning with salt and pepper. Return the seafood to the pan.
- Toss with Pasta: Add cooked pasta to the sauce, tossing to coat. If needed, loosen the sauce with reserved pasta water.
- Serve: Plate the pasta, garnish with more Parmesan and fresh parsley, and serve immediately.
