Description

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar, feta, or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, or onions)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter or olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Fold in the cheese, vegetables, and cooked meat if using.
  3. Combine Wet Ingredients: In a separate bowl, beat the eggs, then add the milk and melted butter. Mix well.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake: Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
