Instructions

  • Cook the pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
  • Caramelize the onions: In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes, until they become golden brown and caramelized.
  • Add garlic and thyme: Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
  • Make the sauce: Pour in the beef broth and bring to a simmer. Let it cook for 2-3 minutes, allowing it to reduce slightly. Add the heavy cream and simmer for another 3-4 minutes, stirring occasionally.
  • Add cheese: Stir in the Gruyère and Parmesan cheeses, allowing them to melt into the sauce. Season with salt and pepper to taste.
  • Combine pasta and sauce: Add the cooked fettuccine pasta to the skillet, tossing it in the sauce until fully coated. Let it simmer for 2-3 minutes to combine the flavors.
  • Serve: Serve hot, garnished with extra cheese or fresh thyme, if desired.
