Description
Sausage Cacciatore is a hearty Italian dish filled with savory sausages, bell peppers, onions, and tomatoes, all simmered in a rich tomato sauce. This comforting dish is perfect for a family dinner or meal prep and pairs beautifully with pasta, polenta, or crusty bread.
Ingredients
Scale
- 1 lb Italian sausage (sweet or spicy, based on preference)
- 1 tablespoon olive oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for heat)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 5-7 minutes. Remove the sausages from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the sliced onion and bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Simmer the Sauce: Stir in the diced tomatoes, chicken broth, tomato paste, oregano, basil, and red pepper flakes. Season with salt and pepper. Bring to a simmer and return the sausages to the skillet.
- Cook the Sausages: Reduce the heat to low, cover the skillet, and let the sausages simmer in the sauce for 25-30 minutes, or until fully cooked through and tender. Taste the sauce and adjust seasoning if necessary.
- Serve: Garnish with fresh parsley and serve over pasta, polenta, or with crusty bread to soak up the sauce.
Notes
- Customizing the Sausages: You can substitute the Italian sausages with chicken, turkey, or plant-based sausages for a lighter or vegetarian version of this dish.
- Add Extra Veggies: Feel free to add mushrooms, zucchini, or spinach for extra flavor and nutrition.
- Make Ahead: Sausage Cacciatore tastes even better the next day as the flavors meld. You can store leftovers in the refrigerator for up to 3 days.
- Spice it up: If you like extra heat, add more red pepper flakes or use spicy Italian sausage.
