Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Beat in the eggs and vanilla extract until well combined. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until well combined.
  2. Make the Caramel Filling: In a microwave-safe bowl, combine the soft caramel candies and heavy cream. Heat in 30-second intervals, stirring until smooth and melted. Allow it to cool slightly.
  3. Chill the Dough: Wrap the cookie dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  4. Assemble Cookies: Preheat your oven to 350°F (175°C). Scoop out a tablespoon of dough, flatten it in your hand, and place a teaspoon of the caramel filling in the center. Fold the dough around the filling, rolling it into a ball. Repeat with the remaining dough and filling.
  5. Bake: Place the cookie balls on a baking sheet lined with parchment paper, leaving space between them. Bake for 10-12 minutes until the edges are firm but the centers are still soft. Remove from the oven and sprinkle with a pinch of sea salt while they are still warm.
  6. Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
