For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup chocolate chips

For the Salted Caramel Sauce:

  • 1 cup sugar
  • 6 tbsp unsalted butter
  • ½ cup heavy cream
  • 1 tsp sea salt

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (163°C).
  • Make the Crust: In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
  • Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar, mixing until well combined. Add the eggs one at a time, followed by the vanilla extract and sour cream. Fold in chocolate chips.
  • Bake the Cheesecake: Pour the filling over the cooled crust. Bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracking.
  • Make the Salted Caramel Sauce: In a saucepan over medium heat, melt the sugar until it turns amber, swirling occasionally. Carefully add butter and stir until melted. Gradually whisk in heavy cream and salt. Remove from heat and let cool.
  • Assemble: Once the cheesecake has cooled, drizzle with salted caramel sauce and sprinkle with extra chocolate chips. Chill in the refrigerator for at least 4 hours or overnight for the best flavor.
