Ingredients

  • Dates: 20 Medjool dates, pitted
  • Cream Cheese: 8 oz., softened
  • Goat Cheese: 4 oz. (optional)
  • Honey or Maple Syrup: 1 tablespoon (optional)
  • Nuts: ¼ cup chopped pecans or walnuts (optional)
  • Bacon: 10 slices, cut in half (optional)
  • Balsamic Glaze: for drizzling

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Dates: Slice each date lengthwise to create a pocket and remove any pits.
  • Make the Filling: In a bowl, mix softened cream cheese and goat cheese (if using). Add honey or maple syrup for sweetness, if desired.
  • Stuff the Dates: Fill each date with the cheese mixture generously.
  • Wrap with Bacon: If using, wrap half a slice of bacon around each stuffed date and secure with a toothpick.
  • Arrange on Baking Sheet: Place the stuffed dates on a lined baking sheet, seam side down.
  • Roast: Bake for 15-20 minutes or until bacon is crispy and dates are caramelized.
  • Drizzle with Glaze: Remove from the oven and drizzle with balsamic glaze before serving.
