- 1 large head of cauliflower, cut into florets
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 1/2 cups sharp cheddar cheese, shredded
- Salt and pepper to taste
- Fresh chives (optional for garnish)
Instructions
- Roast the Garlic and Cauliflower:
- Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil. Toss cauliflower florets with olive oil, salt, and pepper. Place the garlic and cauliflower on a baking sheet and roast for 25-30 minutes, until golden and tender.
- Sauté the Onion:
- In a large pot, heat a bit of olive oil over medium heat. Sauté the diced onion until soft and translucent, about 5 minutes.
- Simmer the Soup:
- Add the roasted cauliflower and squeeze the roasted garlic cloves into the pot. Pour in the vegetable broth, bring to a boil, and simmer for 10 minutes.
- Blend the Soup:
- Using an immersion blender, puree the soup until smooth. Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Season and Serve:
- Add salt and pepper to taste. Ladle into bowls and garnish with fresh chives if desired.
Notes
- For a thicker soup, reduce the broth or add a few potatoes when cooking the cauliflower.
- Swap cheddar for a different cheese like Gruyère for a new twist.
