Instructions

  1. Cut the watermelon into manageable chunks, removing any seeds.
  2. In a blender, combine the watermelon chunks, lime juice, and honey. Blend until smooth.
  3. Taste the mixture and adjust sweetness or tartness by adding more honey or lime juice if desired.
  4. Pour the blended mixture into popsicle molds. Optionally, add mint leaves before sealing.
  5. Insert sticks (if needed) and freeze for at least 4 hours, or until solid.
  6. To release popsicles, run warm water over the outside of the molds for a few seconds before enjoying.
