  • 1 jalapeño pepper, finely chopped (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Prepare the shrimp by placing them in a bowl and covering with lime juice. Refrigerate for about 2 hours until opaque.
  2. While the shrimp marinates, chop the red onion, tomato, jalapeño pepper, and avocado into bite-sized pieces.
  3. Once the shrimp is ready, drain excess lime juice but retain a little for flavor. In a large bowl, combine shrimp with all chopped veggies and cilantro.
  4. Season with salt and pepper to taste. Optionally add more lime juice or hot sauce.
  5. Let sit in the fridge for another 30 minutes before serving.
  6. Serve on plates or tortilla chips, drizzling any remaining juices over the top.
