  • 1 cup fresh strawberries, hulled
  • 1 cup full-fat coconut milk
  • 1 cup fresh blueberries, hulled
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon lemon juice

Instructions

  1. Wash all fruits thoroughly and remove stems from strawberries and blueberries.
  2. Blend strawberries with 1 tablespoon of honey or maple syrup and lemon juice until smooth. Pour into popsicle molds to fill one-third of each mold.
  3. In a bowl, mix coconut milk with remaining honey or maple syrup until well combined. Pour into molds to fill another third.
  4. Blend blueberries with 1 tablespoon of honey or maple syrup and lemon juice until smooth. Pour into molds to fill nearly to the top.
  5. Insert sticks into molds and freeze for 4-6 hours or until fully set. To remove, run warm water over molds for a few seconds.
