  • 1 cup instant couscous
  • 2 cups water
  • 2 medium fresh lemons (juiced)
  • 3 tablespoons extra virgin olive oil
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup toasted pine nuts
  • Salt and pepper to taste

Instructions

  1. Boil 2 cups of water in a medium saucepan. Add 1 cup of couscous, cover, and remove from heat. Let sit for 5 minutes.
  2. Fluff the couscous with a fork and spread it on a baking sheet to cool completely.
  3. While the couscous cools, chop the cucumber, halve the cherry tomatoes, slice the red onion, and chop the parsley.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large bowl, combine cooled couscous with chopped vegetables and pine nuts.
  6. Drizzle dressing over the salad mix and toss gently to combine. Serve immediately or chill in the fridge for an hour before serving.
