Greek summer salad with lemon oregano dressing is a vibrant and refreshing dish that captures the essence of summer.


Ingredients

  • 1 cup cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • 2 tbsp fresh oregano leaves, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop cucumbers into half-moons, halve cherry tomatoes, and thinly slice red onion. Place in a large bowl.
  2. Crumble feta cheese over the veggies.
  3. In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper until combined.
  4. Pour dressing over the salad and toss gently until everything is coated.
  5. Chill in the fridge for 15 minutes before serving to allow flavors to meld.
