  • 4-6 fresh limes (juice and zest)
  • 1 lb boneless chicken breast
  • 4 cups low-sodium vegetable broth
  • ½ cup fresh cilantro (finely chopped)
  • 1 small red onion (diced)
  • 2 ripe tomatoes (diced)
  • Salt, to taste

Instructions

  1. Poach the chicken breast in simmering water or broth for 15-20 minutes until cooked through. Allow it to cool, then shred into bite-sized pieces.
  2. Squeeze the limes to obtain about ½ cup of juice; zest one or two limes for added flavor.
  3. In a large bowl, combine vegetable broth, lime juice, shredded chicken, cilantro, diced tomatoes, and red onion. Mix until well combined.
  4. Cover and refrigerate for at least one hour to let the flavors meld.
  5. Before serving, taste and adjust seasoning with salt or more lime juice as needed.
  6. Serve chilled in bowls garnished with additional cilantro or lime wedges.
