  • 1 cup bulgur wheat
  • 2 cups water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons fresh lemon juice
  • 4 tablespoons extra virgin olive oil
  • 1/4 cup chopped fresh parsley (or herbs of your choice)
  • Salt and pepper to taste

Instructions

  1. Rinse bulgur wheat under cold water. In a saucepan, bring 2 cups of water to a boil; add bulgur, reduce heat to low, cover, and simmer for 12-15 minutes until fluffy.
  2. While the bulgur cooks, chop the cucumber and halve the cherry tomatoes. Combine them in a mixing bowl with salt.
  3. In another bowl, whisk together lemon juice, olive oil, salt, pepper, and chopped herbs.
  4. Once bulgur is cooked and slightly cooled, fluff it with a fork and combine it with the chopped vegetables.
  5. Pour the dressing over the mixture and gently toss until well combined.
  6. Serve chilled or at room temperature; garnish with additional herbs if desired.
