  • Divide and Color: Divide the cheesecake mixture into several bowls, depending on how many colors you want (typically 5-6 for a full rainbow). Add food coloring to each bowl and stir until the colors are vibrant.
  • Create the Swirls: Pour the colored cheesecake mixtures onto the cooled crust, spooning them in randomly. Use a toothpick or skewer to swirl the colors together gently, creating a beautiful rainbow pattern.
  • Bake the Bars: Bake for 35-40 minutes, or until the center is set. Remove from the oven and allow the bars to cool completely before refrigerating for at least 4 hours or overnight.
