- 2 large potatoes, cut into cubes
- 1 red bell pepper, sliced
- 1 yellow onion, sliced

- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper for easy cleanup.
- Prepare the Veggies: Place the cubed potatoes, bell pepper slices, and onion on the tray. Drizzle with olive oil and sprinkle with thyme, paprika, salt, and pepper. Toss to coat evenly.
