Description

This Quick and Easy Sausage Traybake is a one-pan meal that combines juicy sausages with roasted vegetables for a simple and flavorful dinner. Perfect for busy weeknights, it's easy to prepare, and cleanup is a breeze!


Ingredients

  • 6 sausages (your choice of pork, chicken, or vegetarian)
  • 2 large potatoes, cut into cubes
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper for easy cleanup.
  • Prepare the Veggies: Place the cubed potatoes, bell pepper slices, and onion on the tray. Drizzle with olive oil and sprinkle with thyme, paprika, salt, and pepper. Toss to coat evenly.
  • Add the Sausages: Nestle the sausages in between the vegetables on the tray.
  • Bake: Place the tray in the oven and bake for 30-35 minutes, turning the sausages halfway through the cooking time. Bake until the sausages are browned and cooked through, and the potatoes are tender.
  • Serve: Garnish with fresh parsley, if desired, and serve hot.
