  • 3 tablespoons rice vinegar
  • 8 oz crab meat (or imitation crab), shredded
  • 4 oz cream cheese, softened
  • 2 tablespoons soy sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions (typically 1 cup rice to 2 cups water).
  2. Once cooked, fold in rice vinegar while the rice is still warm. Allow it to cool slightly.
  3. In a mixing bowl, combine shredded crab meat, cream cheese, soy sauce, and optional green onions. Mix until well incorporated.
  4. Preheat oven to 350°F (175°C). Spread half of the seasoned rice in a greased baking dish. Layer the crab mixture on top followed by the remaining rice. Finish with shredded cheese.
  5. Bake for 20 minutes or until the cheese is melted and golden brown.
