For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream

For the Pumpkin Swirl:

  • 1 cup pumpkin puree
  • ½ cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Instructions

  • Preheat Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  • Make the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
  • Prepare the Cheesecake Filling: In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the vanilla extract, then beat in the eggs one at a time, mixing until just combined. Finally, stir in the sour cream.
  • Make the Pumpkin Mixture: In another bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract until well mixed.
  • Layer the Mixtures: Pour half of the cheesecake filling over the crust. Spoon half of the pumpkin mixture on top, and use a knife to swirl. Repeat with the remaining cheesecake and pumpkin mixtures.
  • Bake: Bake in the preheated oven for about 55-65 minutes, or until the edges are set and the center has a slight jiggle.
  • Cool and Chill: Turn off the oven, crack the door, and let the cheesecake cool for an hour. Then refrigerate for at least 4 hours, preferably overnight.
  • Serve: Carefully remove the cheesecake from the springform pan and slice to serve. Enjoy!
