For the whipped cream topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (163°C).
  • Make the Crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbly. Press this mixture into the bottom of individual dessert cups, filling them about ¼ full.
  • Bake the Crust: Place the cups on a baking sheet and bake for about 5-7 minutes until golden. Remove and let cool.
  • Prepare the Filling: In a large bowl, beat the softened cream cheese until smooth. Add sugar and pumpkin puree, mixing until well combined. Incorporate the eggs one at a time, then add vanilla, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  • Fill the Cups: Pour the cheesecake filling over the cooled crusts in each cup, filling them about ¾ full.
  • Bake: Bake for 25-30 minutes until the edges are set but the center is slightly jiggly. Remove from the oven and let cool at room temperature.
