- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat and Prep: Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or grease it well.
- Make the Filling: In a bowl, mix the cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine Wet Ingredients: In another bowl, mix pumpkin puree, oil, eggs, and vanilla until smooth.
- Combine Mixtures: Fold the wet ingredients into the dry ingredients until just combined.
- Fill Muffin Cups: Fill each muffin cup 2/3 full with batter, add 1 tablespoon of cream cheese filling in the center, then top with more batter to cover.
- Bake: Bake for 18-22 minutes or until a toothpick comes out clean. Let cool for 5 minutes before transferring to a wire rack.
Notes
- For a healthier option, substitute half the flour with whole wheat flour.
