Ingredients
Scale
- Wet Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Add-ins:
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
- Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla, mixing well.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
- Combine Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Add Chocolate Chips: Gently fold in the chocolate chips (and nuts, if using) until evenly distributed.
- Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let the bars cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before cutting into squares.
Notes
- For a richer flavor, consider adding a swirl of peanut butter or a cream cheese frosting on top.
