  • 4 medium potatoes (about 2 pounds, peeled and diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup corn (fresh, frozen, or canned)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Optional garnishes: Chopped parsley or shredded cheese

Instructions

  • Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sausage and cook for 5-7 minutes until browned. Remove and set aside.
