Description

These creepy yet tasty peanut butter Halloween eyeballs are a perfect combination of sweet and salty. With a creamy peanut butter center and a chocolate coating, they’re fun to make and perfect for Halloween parties!


Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • Red and black food coloring (for decorating)
  • 24 mini candy eyeballs (optional for added effect)

Instructions

  • Make the Peanut Butter Filling: In a large bowl, mix the peanut butter, softened butter, vanilla extract, and powdered sugar. Stir until well combined and a dough-like consistency forms.
  • Shape the Eyeballs: Roll the peanut butter mixture into small 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate for about 30 minutes to firm up.
  • Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth.
  • Dip the Eyeballs: Using a fork or skewer, dip each peanut butter ball into the melted white chocolate, ensuring it’s fully coated. Place back on the parchment paper to set.
  • Create the Iris and Pupil: Melt the semi-sweet chocolate chips and use a toothpick or piping bag to create the "iris" by placing a small dot of dark chocolate on top of each eyeball. Use red food coloring for spooky veins and black for extra detailing. You can also stick mini candy eyeballs in the center.
  • Cool and Set: Let the eyeballs cool in the refrigerator for about 15-20 minutes to allow the chocolate to harden completely.
  • Serve: Once set, your peanut butter eyeballs are ready to spook and delight your guests!
