Description

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter (melted)

Cheesecake Filling:

  • 2 (8 oz) packages cream cheese (softened)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Peach Layer:

  • 3 large peaches (peeled and sliced)
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold, cubed)
  • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  • Prepare the Crust:
    • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, then let it cool.
  • Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating after each addition. Stir in the vanilla extract and sour cream. Pour the cheesecake filling over the cooled crust and spread evenly.
  • Peach Layer:
    • In a separate bowl, toss peach slices with sugar, cornstarch, and lemon juice until coated. Arrange the peaches in an even layer on top of the cheesecake filling.
  • Prepare the Crumb Topping:
    • In another bowl, mix flour, oats, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Sprinkle the crumb topping over the peaches.
  • Bake:
    • Bake for 45-55 minutes or until the cheesecake is set in the center and the crumb topping is golden brown.
  • Cool and Serve:
    • Let the cheesecake cool to room temperature before refrigerating for at least 4 hours or overnight. Slice and serve chilled.

Notes

  • For extra flavor, drizzle caramel sauce over the top before serving.
