- 1/2 cup sour cream
Peach Layer:
- 3 large peaches (peeled and sliced)
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
Crumb Topping:
- 1/2 cup all-purpose flour
- 1/2 cup oats
- 1/4 cup brown sugar
- 1/4 cup unsalted butter (cold, cubed)
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- Prepare the Crust:
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, then let it cool.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating after each addition. Stir in the vanilla extract and sour cream. Pour the cheesecake filling over the cooled crust and spread evenly.
- Peach Layer:
- In a separate bowl, toss peach slices with sugar, cornstarch, and lemon juice until coated. Arrange the peaches in an even layer on top of the cheesecake filling.
- Prepare the Crumb Topping:
- In another bowl, mix flour, oats, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Sprinkle the crumb topping over the peaches.
- Bake:
- Bake for 45-55 minutes or until the cheesecake is set in the center and the crumb topping is golden brown.
- Cool and Serve:
- Let the cheesecake cool to room temperature before refrigerating for at least 4 hours or overnight. Slice and serve chilled.
Notes
- For extra flavor, drizzle caramel sauce over the top before serving.
- You can use canned or frozen peaches if fresh peaches are unavailable.
