Instructions

- Bake the Cheesecake: Bake for 50-60 minutes, or until the cheesecake is set and slightly golden around the edges. Allow to cool completely.
- Prepare the Peach Topping: In a saucepan, combine peaches, sugar, cinnamon, and lemon juice. Cook over medium heat for 5-7 minutes until the peaches release their juice and become soft. Remove from heat and set aside.
- Make the Cobbler Topping: In a bowl, mix flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add milk and stir until combined.
- Assemble the Cobbler Topping: Spoon the peach mixture over the cooled cheesecake. Drop spoonfuls of the cobbler topping evenly over the peaches.
