Description

This Panko Baked Cod features flaky, tender cod fillets coated in crispy, golden panko breadcrumbs. Perfectly seasoned and baked to perfection, it’s a simple, healthy seafood dinner that’s quick to prepare and full of flavor.

Ingredients

Scale
  • 4 cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Cod: Pat the cod fillets dry with paper towels to remove any excess moisture. Season both sides with salt, pepper, and a sprinkle of garlic powder and onion powder.
  3. Make the Coating: In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, paprika, and olive oil (or melted butter). Mix well to coat the breadcrumbs evenly.
  4. Coat the Cod: Press each cod fillet into the panko mixture, ensuring each piece is fully coated on both sides. Gently press the breadcrumbs onto the fish to adhere well.
  5. Bake the Cod: Place the coated fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the cod flakes easily with a fork and the breadcrumbs are golden and crispy.
  6. Serve: Garnish with chopped parsley and serve with lemon wedges, if desired.

Notes

  • Fish Substitutes: If you prefer a different type of fish, try using tilapia, haddock, or halibut for a similar texture and flavor.
  • Extra Crispiness: For a crunchier crust, you can briefly broil the cod for 1-2 minutes at the end of the baking time. Keep an eye on it to prevent burning.
  • Flavor Variations: Add a pinch of cayenne pepper or Italian seasoning to the panko mixture for a different flavor profile.
