  • Author: my aunty recipes

Description

Start your day with fluffy pancakes infused with the vibrant flavors of orange and cinnamon. These light and aromatic pancakes are the perfect way to elevate your breakfast, combining the warmth of cinnamon with the fresh citrusy zest of orange.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup milk (whole or 2%)
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • Zest of 1 orange
  • 2 tbsp fresh orange juice
  • 1 tsp vanilla extract

For serving (optional):

  • Maple syrup or honey
  • Fresh orange slices
  • Powdered sugar or extra cinnamon for dusting

Instructions

  • Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • Mix the wet ingredients: In a separate bowl, combine milk, egg, melted butter, orange zest, orange juice, and vanilla extract.
  • Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix; it’s okay if there are small lumps.
  • Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour about 1/4 cup of batter for each pancake. Cook for 2-3 minutes on each side, or until golden brown.
  • Serve: Stack the pancakes and drizzle with maple syrup or honey. Garnish with fresh orange slices, a dusting of powdered sugar, or extra cinnamon.

Notes

  • Rest the batter: Allow the pancake batter to rest for 5-10 minutes before cooking. This helps the pancakes rise better.
  • Customize toppings: Add whipped cream, nuts, or fresh berries for a more indulgent breakfast.
  • Make it dairy-free: Use almond milk or oat milk and replace the butter with coconut oil or vegan butter for a dairy-free version.
