Description

Ingredients

  • 2 large oranges (juiced and zest)
  • 2 cups almond flour
  • 1/2 cup sugar (or sweetener of choice)
  • 3 large eggs
  • 1/4 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8-inch cake pan and line with parchment paper.
  • Zest and juice the oranges. Set aside.
  • In a large bowl, whisk together the eggs, sugar, oil (or butter), vanilla extract, orange zest, and juice.
  • In a separate bowl, combine almond flour, baking powder, and salt. Stir to combine.
  • Gradually add the dry ingredients to the wet ingredients and mix until smooth.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Optional: dust with powdered sugar or drizzle with orange glaze before serving.
