Ingredients

For the Chili:

  • Olive Oil: 2 tablespoons
  • Onion: 1 large, diced
  • Garlic: 3 cloves, minced
  • Bell Peppers: 2 (red and green), diced
  • Carrot: 1 large, diced
  • Celery: 2 stalks, diced
  • Ground Beef or Turkey: 1 pound (optional)
  • Canned Beans: 2 cans (15 oz each), drained and rinsed (black and kidney)
  • Canned Diced Tomatoes: 2 cans (15 oz each)
  • Beef or Vegetable Broth: 2 cups
  • Chili Powder: 2 tablespoons
  • Cumin: 1 teaspoon
  • Oregano: 1 teaspoon
  • Salt and Pepper: To taste

Instructions

  • Sauté the Base:
    • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and cook for about 5 minutes until translucent. Stir in 3 minced garlic cloves and cook for another 1-2 minutes.
  • Add Vegetables:
    • Incorporate 2 diced bell peppers, 1 diced carrot, and 2 diced celery stalks. Sauté for 5-7 minutes until softened.
  • Add Meat (if using):
    • Push the veggies to one side and add 1 pound of ground beef or turkey. Cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  • Mix in Beans and Tomatoes:
    • Stir in 2 cans of drained beans and 2 cans of diced tomatoes (with juices).
  • Season:
    • Add 2 tablespoons of chili powder, 1 teaspoon of cumin, 1 teaspoon of oregano, and salt and pepper to taste. Mix well.
  • Add Broth:
    • Pour in 2 cups of broth and bring to a boil.
  • Simmer:
    • Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally. Adjust seasoning as necessary.
  • Serve:
    • Ladle into bowls and top with optional toppings like sour cream, cheese, or avocado.

Notes

  • Feel free to customize with your favorite beans or veggies. For a spicier kick, add diced jalapeños or cayenne pepper.
