Ingredients
- Chicken Breasts: 2 large, boneless and skinless, cut into bite-sized pieces
- Olive Oil: 2 tablespoons
- Garlic: 4 cloves, minced
- Onion: 1 medium, diced
- Diced Tomatoes: 1 can (14.5 ounces), with juices
- Chicken Broth: 4 cups
- Pasta: 12 ounces (penne or rotini)
- Italian Seasoning: 2 teaspoons
- Salt and Pepper: To taste
- Parmesan Cheese: 1 cup, grated
- Mozzarella Cheese: 1 cup, shredded
Instructions
- Sauté Chicken: In a large pot, heat olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper. Sauté until browned and cooked through, about 5-7 minutes. Remove and set aside.
- Cook Aromatics: In the same pot, add diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
- Add Tomatoes and Broth: Pour in the diced tomatoes and chicken broth. Stir in the Italian seasoning.
- Cook Pasta: Bring the mixture to a boil. Add the pasta, stirring to ensure it’s submerged. Cover and simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
- Combine and Melt Cheese: Return the chicken to the pot. Stir in the Parmesan and half of the mozzarella cheese until well combined. Sprinkle the remaining mozzarella on top, cover, and let sit for 3-5 minutes until melted.
