Ingredients

Scale

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup pumpkin puree (not pumpkin pie filling)

1/4 cup powdered sugar

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

A pinch of salt

For the Coating:

1 cup graham cracker crumbs

Optional: 1/2 cup melted chocolate for drizzling

Instructions

  • Make the Filling:
    • In a mixing bowl, beat together the softened cream cheese and pumpkin puree until smooth. Add powdered sugar, brown sugar, vanilla, and spices, mixing until well combined.
  • Chill:
    • Cover the bowl and refrigerate the mixture for about 30 minutes to firm up.
  • Form the Balls:
    • Once chilled, scoop out the mixture and roll into 1-inch balls. Place on a parchment-lined baking sheet.
  • Coat the Balls:
    • Roll each ball in graham cracker crumbs until fully coated. If desired, drizzle with melted chocolate for extra sweetness.
  • Final Chill:
    • Return the coated balls to the refrigerator for at least 30 minutes to set before serving.

Notes

  • Feel free to experiment with spices to suit your taste.
  • For a fun twist, consider using different coatings, like crushed cookies or nuts.
