- Prepare the Crust:
- In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and sugar (if using). Mix until the crumbs are well-coated and resemble wet sand.
- Press the mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Chill in the refrigerator for about 15 minutes while preparing the filling.
- Make the Filling:
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar and cocoa powder, mixing until fully combined.
- Pour in the cooled espresso and vanilla extract. Mix until smooth and well incorporated.
