Instructions
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Spoon the mixture evenly into the bottom of mason jars or dessert cups, pressing down firmly to form a crust layer.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla, mixing until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the Jars: Layer the cheesecake filling over the crust in each jar. Smooth the top with a spatula. Refrigerate for at least 4 hours (or overnight) to allow the cheesecake to set.
- Add Topping: Before serving, spoon cherry pie filling over the chilled cheesecake layer. If using fresh cherries, slice and layer them on top.
