Description

  • 1 ½ cups heavy whipping cream

For the cherry topping:

  • 1 can (21 oz) cherry pie filling

Instructions

  • Prepare the Crust
    In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well mixed. Press the mixture into the bottom of a 9x9-inch baking dish. Refrigerate while preparing the filling.
  • Make the Cheesecake Filling
    In a large mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Assemble the Bars
    Spread the cheesecake mixture evenly over the prepared crust. Smooth the top with a spatula. Refrigerate for at least 4 hours or until the bars are firm.
  • Top with Cherry Filling
    Once the cheesecake bars are chilled, spread the cherry pie filling evenly over the top. Return to the fridge until ready to serve.
  • Serve
    Slice into bars and serve chilled. Enjoy!
