  • 2 cups cooked day-old rice
  • 8 oz beef sirloin, thinly sliced
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp cooking oil (divided)
  • 2 green onions, chopped
  • 1 tsp sesame oil

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing beef against the grain.
  2. Heat 1 tbsp oil in a skillet over medium-high heat. Add beef and stir-fry for about 3 minutes until browned. Remove and set aside.
  3. In the same skillet, scramble eggs until fully cooked; push to one side.
  4. Add mixed vegetables to the skillet and stir-fry for about 4 minutes until tender yet crisp.
  5. Return the beef to the skillet with rice and soy sauce. Toss everything together for another 5 minutes.
  6. Drizzle sesame oil over the dish before serving and garnish with green onions.
